1. The Live Demo is great, this looks like what I need for my shop. Is it possible to see what this system looks like from the Admin side?
=> sorry for this requires, we cannot setup it, so you can see in our screenshot, it show as our Admin site.
2. Specifically When someone uploads a file into the system how do I as the owner of the system see and use that file and get it into production?
=> When someone uploads a files, you will see in order. In order detail page, the uploads file is attached in this.
